  3. Deglaze the pan with the cooking wine. Raise heat up to medium and simmer until the wine has reduced and burned off its alcohol. Maybe 5 minutes. Although this was savory, I had it for breakfast.

Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together. At this point, the sausage won't be cooked through. Remove the sausages from the skillet, and place on a cutting board to slice them. Now, sauté the onions and bell peppers in the same skillet.
