This is the most elaborate egg curry ever, I believe and for some reason I am too lazy to prepare this curry. I think it all starts with the fact that I need to grate, roast and grind coconut. But duck eggs have a strong odour compared to hen. So it requires a heavy masala base to counter it.
Instructions to make Duck egg curry:
- Heat oil and fry the boiled eggs marinated with salt and turmeric powder
- Remove it and fry the Potatoes adding salt and turmeric powder and keep aside
- Heat more oil and temper cumin seed bay leaf and whole garam masalas
- Add ginger garlic paste and saute well
- Add onion chopped and saute well
- Now add salt and turmeric powder and saute till it is brown
- Add red chilli Powder and tomato puree mix well till oil separates
- Now add the Potatoes and mix well
- Add water and boil,add the eggs
- Finally add sugar and garam masala powder
The other ways of cooking this curry in Kerala cuisine is a tomato based duck egg roast or an omelette. Dim Kosha or Hanser Dimer Kosha is one of the most satisfying Bengali style Duck Egg Curry. This exotic curry is full of flavours and quite rich in taste. It is slightly different from Dim er Dalna or Everyday Egg Curry. Dim er Kosha is spicier, tastier and thicker than regular Dimer Jhol.
