- Add onion. Add bok choy, garlic, ginger, and salt. Stirring occasionally. The bok chow will wilt.
- Cook till bok choy stems are tender but still a little crunch.
Normally, I'm not a fan of Bok Choy in stir frys because the pieces are too big, it's really chewy and too tough to get through. Bok choy is sometimes referred to as white cabbage, not to be confused with Napa cabbage, which is also a type of Chinese cabbage. There are many kinds of bok choy that vary in color, taste, and size, including tah tsai and joi choi. Taiwan Bok choy is best suited for both raw and cooked applications such as sautéing, steaming, braising, and boiling. The fresh greens can be Taiwan Bok choy pairs well with aromatics such as garlic, scallions, and ginger, mushrooms, eggplant, bell pepper, carrots, sesame seeds, tofu, meats.
