  1. pat dry chicken before seasoning, then
  2. salt n pepper skin of quarters, next
  3. cover with foil and bake chicken in oven @ 356* till 165* internal temp. this will take at least an hour
  4. cool chicken in cooler over night
  5. you will make one dry batter and one wet, wet should be very thin in consistency, it should resemble milk in consistency
  6. don't season dry mix, season wet batter with lowerys to taste and pepper liberally. you want a fair amount of pepper. wet than dry. shake off excess dry batter
  7. deep fry chicken at 350* - 365* till internal temp is 150*, takes roughly 7 - 10 mins for very large pieces
