Instructions to make Chouriço & Bean Casserole:
- Place Beans in a drainer. Rinse with cold water. Let it drain until ready to go into pan.
- Prepare Chouriço. Remove casings and then pull apart into pieces.
- In a large pan, sauté chopped onion with olive oil until slightly golden in color. Add the prepared chouriço. Cook for about 5 minutes on medium heat. Stir occasionally.
- Next, add the tomato sauce, tomato paste and garlic powder. Stir well until tomato paste has dissolved.
- Add drained beans. Carefully fold with chouriço. Then let it simmer for about 5 minutes on low heat. Stir occasionally.
- Place into baking dish. Sprinkle with a bit of olive oil. Cover with foil wrap.
- Place in the oven at 350 for 20 - 30 minutes.
