Transfer the garlic to a coarse sieve set over a small saucepan. Wash chicken under cold running water and. add mushrooms, chicken livers and parsley. Add chicken livers, one piece at a time. Add Vin Santo, scraping the brown bits from the bottom of the saute pan. In a very hot skillet/frying pan, melt the butter and fry the chicken livers until golden brown on both sides.
